For the love of my Instant Pot

You know that Brad Paisley song, “I thought I loved you then,” well that’s how I feel about my Instant Pot.  Hard boiled eggs that you don’t have to babysit on the stove AND are super easy to peel, yes!  Pulled pork in less than an hour, yes!  Soups throughout the fall and winter, yes!  The list goes on and on.  This week, I tried two new recipes and LOVED them both.  Spaghetti and mashed potatoes…

I am all about one pot meals, so spaghetti, all in one place, sounded like magic to me.  Using the saute setting, brown the meat with garlic (and onions, if your family isn’t “allergic” to them, like mine).  Then add half a box of noodles, breaking them in half to fit.  Dump in the whole jar of spaghetti sauce and 2 cups of water.  Don’t mix it, just make sure the noodles are covered.  Nine minutes on high pressure, and voila, perfect spaghetti for dinner.  I was nervous because I am SO anti-squishy overcooked noodles, but it was perfect!  This is the recipe I (mostly) followed:

In preparation for Thanksgiving, I’m trying out different recipes, since this is my first holiday season with my dear Instant Pot.  I found this recipe, called “Life Changing Mashed Potatoes,” so of course I had to try it.

She’s not lying, so much easier and faster than mashed potatoes on the stove.  Like why would I EVER cook them that way again?  Throw the cubed potatoes in the Instant Pot for 8 minutes on high, drain, mash, and mix in the other ingredients.  That’s it.  I did not peel my potatoes because it’s America, the land of the free, and if you’re using red or yellow potatoes, not necessary!  And I also used my immersion blender instead of a potato masher because it’s way faster.  This is the one I have: Cuisinart CSB-75BC Smart Stick 200 Watt 2 Speed Hand Blender, Brushed Chrome and it just so happens to be on sale for 46% off right now!

Now, you know there will be leftovers on Thursday.  Again, this is America, land of excess and stretchy waistbands.  Leftovers are great, but only if you actually get around to eating them before they’re gross.  Wastefulness is not thankfulness.  So I bring you a recipe I made with my leftover mashed potatoes:

I added a bit more cheese than the recipe called for because it’s cheese, and no one in my house has ever said, this has too much cheese.  I also had some leftover ham that I cubed up and added, kinda like blueberries to real pancakes.  I am pretty sure the same exact thing could be done with your leftover turkey.
