Long time, no see, sorry!! Between pneumonia and Christmas, life has been crazy, but I’m back with a book review and a recipe.
The best part about being sick… I got to read a 700 page book in less than a week. I highly recommend Steven and Owen King’s Sleeping Beauties: A Novel. If you’re thinking, Carla, I’m not into terrifying myself and being afraid to be home alone. Why in the world would I read something by Steven King? I hear ya, I thought the same thing, until I read 11/22/63: A Novel. Yes, he has nightmare scary books, like Pet Sematary: A Novel and It: A Novel. But he also writes books that are more mindful, and thought provoking. For realz, coming from a girl that is a scaredy cat walking out to her car alone in the dark. Sleeping Beauties is a 5 out of 5. Can you imagine a world where all the women fall into a mysterious sleep and the men are left like huh? From trying to protect their own wives and daughters, to trying to solve the mystery behind the sleeping, human nature is for sure examined. And the Kings are 100% feminists, if that tells you anything about how interesting things get sans females. Another Steven King recommendation, is the The Bill Hodges Trilogy Boxed Set: Mr. Mercedes, Finders Keepers, and End of Watch. Highly, highly recommend, with number 1 and 3 being the best.
And now, I’m going to share one of my go-to recipes. My, oh yay Carla brought that again recipes. For real, on Christmas, a family member said, “I was thinking about these this morning and hoping you would be bringing them.” Best part, they are super easy.
8 oz softened cream cheese
1 cup sour cream (which is also 8 oz)
3 cups shredded cheese (cheddar or pepper jack are my faves, but you do you)
1 cup medium salsa
1 packet of ranch mix (the spicy one is best)
1.5 pounds of sliced turkey from the deli
Mix up the first 5 ingredients. Spread about 2 tablespoons onto a tortilla. Leave a little room of the side of the tortilla that gets rolled up last. Otherwise the cheese mixture bloops out.
Then put 2 slices of turkey on there and roll it up. Wrap it up tightly with foil. Let them chill for a couple hours, or overnight. Then cut them up, around an inch or a little less thick. Done. That’s it. Easy peasy and super yummy.
What are your plans for New Years Eve? I’m going to be sleeping before midnight, for sure because I like sleep. And then of course, I will be watching the Rose Parade on New Years Day. Does everyone watch it or is that the native Californian in me?
