Pizza Night

What traditions does your family have?  We talk about traditions a lot around the holidays, but we have them all year really.  My family has pizza EVERY Sunday night.  The only time this doesn’t happen is if it’s a 3 day weekend, and we’re not home, then the pizza will happen Monday night, still the last night of the weekend.

This tradition was instated by Tom because of his love for the pizza.  I didn’t fight it because why would I argue the easiest dinner night of the week, picking up pizza from Papa Murphy’s?  Sometimes it will be from a different pizza place, like if no one is in the mood to drive, Dominoes delivers.  It’s the only delivery place that comes to our house, which is actually a blessing in disguise for the old wallet and waistline.  Trust me, I lived in New York, and I know the thrill of getting sushi delivered at midnight, and I do miss it.  And now I want sushi….

Back to the pizza night, as time went on, I decided I should really know how to make my husband’s favorite food.  So with trial and error, my stand mixer by my side, and a willing test kitchen, I have a super good pizza dough recipe to share with you.  I don’t make homemade pizza every week because I am not giving up the easiest dinner night, but I do make it once or twice a month.

If you don’t have a stand mixer, I am sure this recipe can be done by hand too.  All that kneading with the flour on a cutting board.  I have not done that, though, because I have the mixer to do the work for me.

Pizza Dough (makes 2 pizzas)

  • 2 cups water
  • 4 1/2 teaspoons active yeast (or 2 packets)
  • 4 teaspoons oil (olive, avocado, canola)
  • 1 teaspoon salt
  • 5 cups flour (up to 2 can be wheat)
  1. Heat water in the microwave until it reaches the temperature suggested by the yeast you’re using.  If you want to throw caution to the wind, one minute is what I do.  The water should be warm, but not hot.  Not warm enough, the yeast won’t wake up and do its thing.  Too hot, and you’ll kill the yeast, so again, it won’t do its job.
  2. Pour the water into your mixing bowl (if it’s really cold, run under warm water to warm it up) and sprinkle the yeast on top.  Give it 5 minutes to get foamy.
  3. Add the oil and salt.  Then all that flour.  Once its combined on a low speed, turn it up to 4 and let it knead the dough for 5 minutes.
  4. Transfer the dough to a greased bowl and cover with plastic wrap.  Keep the bowl in a warm place, so it can double.  This takes 1-2 hours.
  5. When it’s time to go in the oven after you’ve added your toppings of choice, bake at 400 for 23-28 minutes.
